GLUTEN, EGG & DAIRY FREE COOKIES

Recent studies have suggested that at least 40% of the population are sensitive to wheat gluten, dairy, eggs and/or table sugar. These food allergies can transcribe itself into problems of digestion, fatigue, insomnia and irritability among many other symptoms. The following delicious cookie recipe avoids those culprit ingredients allowing you to enjoy a bit of enjoyment without guilt.



Ingredients
1 Cup Almond Flour
¼ Cup Maple Syrup
¼ Cup Roasted Tahini
1 Tbs Vegetable Oil
1 Tsp Vanilla Extract
¼ Tsp Salt
Sesame Seeds

  1. Combine almond flour and salt in bowl
  2. In a separate bowl blend maple syrup, tahini, oil and vanilla
  3. Blend wet ingredient into dry ingredients
  4. Form the dough into 1 inch balls
  5. Coat balls with the sesame seeds
  6. Place balls on a baking sheet lined with parchment paper
  7. Flatten balls to ¼ inch
  8. Bake at 350 degrees for 10-12 minutes

Makes about a dozen cookies

  1. Nice! I'm gonna try these with Enjoy Life GF DF Choc chips (buy them at Giant or Whole Foods). I'm not a fan of Tahini/sesame seeds.
