GARY'S HEALTHY PHILLY "PHRIES"

Oh, those irresistible French Fries when approaching those infamous concession stands on the boardwalk down the shore. Unfortunately, the usual deep frying adds unwanted calories to this ever appealing treat. The following simple yet delicious recipe cooks the potato by roasting with minimal oil, less of the mess and without the greasiness of the fries. Young or old, no one can resist this universal treat. Recipe follows...

 
Ingredients

• 4 Medium baking potatoes, washed and scrubbed
• 1-2 TBS Olive Oil (Just enough to coat the potatoes)
• 1 TSP Paprika (Optional)
• Salt

Cooking Instructions
  1. Preheat Oven 400 degrees 
  2. Slice potatoes about ¼ inch thickness. Then cut the slices lengthwise again about ¼ inch. 
  3. In a large bowl place the oil and paprika and mix. 
  4. Place potatoes in the bowl and mix together until thoroughly coated. 
  5. Line the inside of a shallow roasting pan with parchment paper. 
  6. Spread the cut potatoes inside the pan so as not to overlap. 
  7. Roast the potatoes for 30 minutes, or until golden brown. 
  8. Turn off oven, mix the potatoes, salt as desired and leave the potatoes in the unlit oven for oven for an additional 5 minutes. Serve right away. 
Just close your eyes and you will think you’re on the Atlantic City Boardwalk. Hmm...I can hear the ocean already.
