Dr. Gary's Healthy Crispy Veggie Pizza


The Crispy Pizza is our Saturday hangout special while we watch a favorite movie. I’m sure it would work just as well for the Superbowl or any other special event. The Crispy Pizza has been a favorite tradition when our grandkids come over on weekends. They express delight in making their very own personal Crispy Pizza from start to finish and then indulging in their creation. The following recipe is for one pizza. This recipe is a variation of the theme featured in a previous blog, the “Vegetarian Roll-up”.





I can only say that I have never made just one. Experience has shown that I end up making many more with the number of hungry people and seconds. My only problem has been fitting them all in the oven. Just multiply the following recipe by the number of people involved.








Ingredients
• 1 Whole grain tortilla
• 1 Medium tomato (Optional), sliced thinly
• 1 Mushroom (Optional), sliced
• Several thin slices of cheese (Provolone, mozzarella, soy, etc.)
• Healthy Greens, washed, drained and dried. My favorites are...
• Baby spinach
• Baby arugula
• Baby Kale (Shown on pictures)
• Virgin Olive 
• Dry herbs (Basil, Oregano, etc.)

Cooking Instructions
• Pre heat oven 350 degrees.
• Brush a light coating of oil on top side of frozen tortilla.
• Place oiled tortilla on middle shelf of hot oven for about 4-5
   minutes until just golden.
• Remove tortilla from oven and place in a non-stick pan.
• Place veggies starting with the greens (if used), then tomato
   slices and mushrooms (if used).
• Place the cheese slices. Make sure the veggies are covered since
   the greens tend to dry.
• Sprinkle a little dry herbs and/or hot pepper. Drizzle a little olive
   oil if desired.
• Return the tortilla to oven for 10-12 minutes until the cheese is
   nicely melted.

Serve hot while the cheese is gooey. South Philly never had it so good!

Notes:

• Gail prefers her greens fully cooked prior and placed on the pizza at the end.
• For vegan I recommend either soy or almond cheese.
• I prefer using sliced cheese rather than shredded because it is less messy for the kids.
• The above veggies are only suggestions. Go ahead and be innovative.

  2. Onions should be pan sautéed with a little olive oil until soft and caramelized before putting on top of a pizza. Raw onions contain a lot of moisture and will not cook evenly if baked on top of a raw pizza dough. Local Shops All In 1 App
